  • Palm oil became popular due to the growing range of palm oil products following the application of the fractionation process. This technique, first developed for beef tallow in the 1870s, separated crude palm oil into olein and stearin. The olein readily fitted into the large Indian demand for cooking oil as it remains a liquid oil in hot climates.
